PRODUCTION AREA: Via Gelsarello, Location Mola, Porto Azzurro, Elba Island
CHARACTERISTICS OF THE LANDS AND VINEYARDS: Plants of about 15 years with east / west exposure, partly flat and partly hilly with spurred cordon training system for a density between 4500 and 5000 plants per hectare. Yield 60 quintals / ha, 1.3 kg per vine.
HARVEST 2019: This wine is the expression of the elegance and freshness that the viticulture of the vine can give on this magical island.
In this vintage the ripening of our Sangiovese and Cabernet has been long and regular and in the last few days we have defoliated the side in the morning to give light to the bunches and preserve the freshness by leaving the covering of the leaves to the hottest afternoon rays. Thanks to the sea breezes that ventilated the grapes in the hottest hours and thanks to the temperature variations between night and day, we arrived in September with healthy grapes and perfect ripeness.
After the careful selection of the grapes and the cleaning of the green parts, with the crushing and destemming we went to steel tanks with controlled temperatures. With the start of fermentation, daily punching down and pumping over were carried out until the sugars were exhausted with temperatures never above 25 ° C.
Complete malolactic fermentation in steel and aging 60% in second passage barriques and 40% in steel.
ALCOHOL CONTENT: 13.5% Vol.
