GRAPES: 60% Sangiovese, 40% Aleatico

PRODUCTION AREA: Via Gelsarello, Location Mola, Porto Azzurro, Elba Island

CHARACTERISTICS OF THE LANDS AND VINEYARDS: Plants of about 15 years with east / west exposure, partly flat and partly hilly with spurred cordon training system for a density between 4500 and 5000 plants per hectare. Yield 70 quintals / ha, 1.6 kg per vine.

HARVEST 2019: Our rosé wine is born thanks to the careful management in the vineyard of the load of grapes so as to be able to collect bunches with medium ripeness that retain a more sustained acidity and a right sugar level. Clusters of Sangiovese and Aleatico are collected manually in boxes from 15 kg and upon arrival in the cellar after destemming and crushing, the crushed grapes are conveyed to the tank where we will have a 12-hour skin maceration at 8 ° C. Once the necessary color has been reached, we proceed with the separation of the free-run wine and the pressing of the skins. After static decantation of the lees, the starting yeast is inoculated on the must for fermentation which will take place in stainless steel at temperatures of 12/13 ° C. The wine for 2/3 of the mass carries out the malolactic fermentation to give more softness.

ALCOHOL CONTENT: 11.5% Vol.
