GRAPES: 100% Ansonica
PRODUCTION AREA: Via Gelsarello, Location Mola, Porto Azzurro, Elba Island
CHARACTERISTICS OF THE LANDS AND VINEYARDS: Plants of about 15 years with east / west exposure, partly flat and partly hilly with spurred cordon training system for a density between 4500 and 5000 plants per hectare. Yield 65 quintals / ha, 1.5 kg per vine.
HARVEST 2019: The grapes of this variety are subjected to a long processing in the vineyard to reduce the number of clusters per plant and the size of the single cluster. In order to have a fruit with valuable characteristics, the final part of the bunch and the wing are in fact cut. These grapes have a delayed ripening compared to other white grape varieties, that is when sugars and aromatic precursors have reached high concentrations. In the first stages of processing, the must is refrigerated (up to 10 ° C) which allows to preserve the valuable characteristics of this product. The fermentation at controlled temperature is followed by a long refinement on the noble lees, with daily batonnages.
